Para muitos pode parecer imposs\u00edvel imaginar um prato sem carne, mas tend\u00eancias mundiais mostram que alimentos de origem vegetal, sobretudo a prote\u00edna, est\u00e3o em ascens\u00e3o.<\/p>\n<h4>Tend\u00eancias da ind\u00fastria aliment\u00edcia<\/h4>\n<p>Os conceitos de vegetarianismo e veganismo n\u00e3o s\u00e3o novos, mas ainda causam confus\u00e3o. Enquanto o primeiro elimina a carne da dieta e restringe seus derivados, o segundo transcende a comida e \u00e9 uma filosofia de vida, na qual nenhum produto de origem animal \u00e9 consumido (inclusive no vestu\u00e1rio e na higiene).<\/p>\n<p>H\u00e1 tamb\u00e9m outras duas vertentes que tem ganhado espa\u00e7o na mesa dos consumidores: a <strong><em>plant-based<\/em><\/strong>, que se trata de uma alimenta\u00e7\u00e3o baseada em alimentos naturais, org\u00e2nicos e sustent\u00e1veis; e a <strong>dieta<\/strong> <strong>flexitariana<\/strong>, que busca reduzir o consumo de carne, embora, esporadicamente (e em propor\u00e7\u00f5es menores) inclua alimentos de origem animal.<\/p>\n<p>Segundo pesquisa do GFI Brasil em parceria com o IBOPE, realizada em 2020, 49% dos brasileiros declaram ter reduzido o consumo de carne, sendo que 39% afirmam consumir alternativas vegetais pelo menos tr\u00eas vezes por semana.<\/p>\n<p>As raz\u00f5es para o consumo de produtos feitos a partir de ingredientes vegetais acompanham tanto um aumento da popula\u00e7\u00e3o vegetariana quanto o maior envolvimento com quest\u00f5es ambientais e preocupa\u00e7\u00e3o com a sa\u00fade. A procura tamb\u00e9m \u00e9 motivada por intoler\u00e2ncias ou alergias relacionadas ao leite animal.<\/p>\n<p>Gigantes como Mantiqueira, Marfrig, JBS, Fazenda Futuro, Danone, Nestl\u00e9 e Unilever j\u00e1 come\u00e7aram a investir neste novo consumidor. Em 2019, pela primeira vez no Brasil, uma s\u00e9rie de produtos foram lan\u00e7ados para atender \u00e0s demandas desse mercado, entre eles est\u00e3o ovos, hamb\u00fargueres, nuggets, maionese, leites e derivados vegetais.<\/p>\n<h4>Mudan\u00e7as no agro<\/h4>\n<p>O aumento da popula\u00e7\u00e3o mundial tamb\u00e9m \u00e9 um fator importante no incentivo \u00e0 ind\u00fastria. A Organiza\u00e7\u00e3o das Na\u00e7\u00f5es Unidas (ONU) estima que, at\u00e9 2050, teremos 9,8 bilh\u00f5es de habitantes no planeta e 66% estar\u00e3o no meio urbano. Na Am\u00e9rica Latina, esse percentual ser\u00e1 de 86%. Isso significa maior demanda de alimentos e escassez de recursos naturais, principalmente de \u00e1gua.<\/p>\n<p>Associado ao crescimento populacional, soma-se a mudan\u00e7a de comportamento dos consumidores. As pessoas procuram, cada vez mais, produtos naturais e sustent\u00e1veis.<\/p>\n<p>Para Raquel Casselli, gerente do The Good Food Institute, vale ressaltar o potencial do Brasil, l\u00edder na produ\u00e7\u00e3o de gr\u00e3os, em criar prote\u00ednas e ingredientes voltados para esse mercado, inclusive com maior valor agregado.<\/p>\n<blockquote>\n<p>\u201cA maioria dos lan\u00e7amentos de carnes vegetais utiliza soja e ervilha na sua composi\u00e7\u00e3o, como fonte proteica. Isso mostra que o produtor de gr\u00e3os pode ter maior rentabilidade tanto por causa da demanda pela <em>commodity<\/em>, quanto pela oportunidade de agregar valor no processamento e venda de um produto minimamente manufaturado, com melhores margens\u201d, sugere Raquel, acrescentando que \u00e9 poss\u00edvel estudar a diversifica\u00e7\u00e3o da mat\u00e9ria-prima olhando para as pot\u00eancias, como o feij\u00e3o.<\/p>\n<\/blockquote>\n<p>O consultor em agroneg\u00f3cio Carlos Cogo explica que a tend\u00eancia mundial do consumo baseado em vegetais deve remodelar a ind\u00fastria do alimento. O uso de produtos e nutrientes vegetais com alto teor de prote\u00edna (soja, trigo, ervilhas, gr\u00e3o-de-bico, girassol, etc.) ir\u00e1 migrar para a produ\u00e7\u00e3o de <em>plant-based<\/em>.<\/p>\n<p>A demanda por prote\u00edna vegetal tende a favorecer fazendas familiares, comenta Cogo. &#8220;A agricultura familiar tem perfil para se beneficiar dessa tend\u00eancia, pois est\u00e1 preparada para produzir vegetais de forma diversificada e, se necess\u00e1rio, em menor escala&#8221;, lembra.<\/p>\n<p>Ainda segundo o consultor, consumidores das gera\u00e7\u00f5es X e Y tendem a escolher marcas e alimentos provenientes de fontes sustent\u00e1veis. A sinaliza\u00e7\u00e3o, portanto, \u00e9 de que a ind\u00fastria tenha mais engajamento consciente sobre como a comida \u00e9 produzida. O consumo estar\u00e1 mais voltado para a sa\u00fade e o bem-estar, valorizando produtos naturais e org\u00e2nicos.<\/p>\n<p>A coordenadora do Itt Nutrifor, Renata Ramos, vislumbra que a ind\u00fastria da carne ter\u00e1 de se remodelar para agregar valor ao produto, refor\u00e7ando a saudabilidade. &#8220;A cadeia da carne ter\u00e1 que ser sustent\u00e1vel. Mesmo que o consumidor queira uma prote\u00edna a partir de gr\u00e3o de bico, por exemplo, se a ind\u00fastria gera muito res\u00edduo, o consumidor n\u00e3o vai comprar.
